Nutrition Education in the K-12 Curriculum
by Board on Children, Youth, and Families Institute of Medicine Steve Olson Food and Nutrition Board Sheila MoatsThe childhood obesity epidemic and related health consequences are urgent public health problems. Approximately one-third of America's young people are overweight or obese. Health problems once seen overwhelmingly in adults, such as type 2 diabetes, cardiovascular disease, and hypertension, are increasingly appearing in youth. Though the health of Americans has improved in many broad areas for decades, increases in obesity could erode these and future improvements. The IOM report Accelerating Progress in Obesity Prevention: Solving the Weight of the Nation recognized the importance of the school environment in addressing the epidemic and recommended making schools a focal point for obesity prevention. The development and implementation of K-12 nutrition benchmarks, guides, or standards (for a discussion of these terms, see the next section of this chapter) would constitute a critical step in achieving this recommendation. National nutrition education curriculum standards could have a variety of benefits, including the following: Improving the consistency and effectiveness of nutrition education in schools; Preparing and training teachers and other education staff to help them provide effective nutrition education; Assisting colleges and universities in the development of courses in nutrition as part of teacher certification and in updating methods courses on how to integrate nutrition education in subject-matter areas in the classroom and in materials; and Establishing a framework for future collaborative efforts and partnerships to improve nutrition education. Nutrition Education in the K-12 Curriculum: The Role of National Standards is a summary of the workshop's presentations and discussions prepared from the workshop transcript and slides. This summary presents recommendations made by individual speakers.

Nutrition Essentials for Mental Health: A Complete Guide to the Food-Mood Connection
by Leslie Korn James LakeExploring the connection between nutrition and mental wellness so therapists can provide more effective, integrated treatment. Diet is an essential component of a client’s clinical profile. Few therapists, however, have any nutritional training, and many don’t know where to begin. In Nutrition Essentials for Mental Health, Leslie Korn provides clinicians with a practical guide to the complex relationship between what we eat and the way we think, feel, and interact with the world. Where there is mental illness there is frequently a history of digestive and nutritional problems. Digestive problems in turn exacerbate mental distress, all of which can be improved by nutritional changes. It’s not unusual for a deficit or excess of certain nutrients to disguise itself as a mood disorder. Indeed, nutritional deficiencies factor into most mental illness—from anxiety and depression to schizophrenia and PTSD—and dietary changes can work alongside or even replace medications to alleviate symptoms and support mental wellness. Nutrition Essentials for Mental Health offers the mental health clinician the principles and practices necessary to provide clients with nutritional counseling to improve mood and mental health. Integrating clinical evidence with the author’s extensive clinical experience, it takes clinicians step-by-step through the essentials for integrating nutritional therapies into mental health treatment. Throughout, brief clinical vignettes illustrate commonly encountered obstacles and how to overcome them. Readers will learn: • Why nutrition matters in mental health • The role of various nutrients in nourishing both the brain and the gut, the “second brain” • Typical nutritional culprits that underlie or exacerbate specific mental disorders • Assessment techniques for evaluating a client’s unique nutritional needs, and counseling methods for the challenging but rewarding process of nutritional change. • Leading-edge protocols for the use of various macro- and micronutrients, vitamins, and supplements to improve mental health • Considerations for food allergies, sensitivities, and other special diets • The effects of foods and nutrients on DSM-5 categories of illness, and alternatives to pharmaceuticals for treatment • Comprehensive, stage-based approaches to coaching clients about dietary plans, nutritional supplements, and other resources • Ideas for practical, affordable, and individualized diets, along with optimal cooking methods and recipes • Nutritional strategies to help with withdrawal from drugs, alcohol and pharmaceuticals And much more. With this resource in hand, clinicians can enhance the efficacy of all their methods and be prepared to support clients’ mental health with more effective, integrated treatment.

Nutrition, Exercise and Epigenetics: Ageing Interventions
by Byung Pal YuThis book focuses on the three most important aspects of ageing research: nutrition, physical exercise and epigenetics. The contributors discuss ways that age-related epigenetic imprints such as DNA methylation and histone acetylation are modified by these two interventions. The emphasis on epigenetics helps to illuminate the underlying mechanisms of anti-ageing interventions, as ageing and disease are predominately epigenetic phenomena. Among the highlights are chapter-length discussion of such topics as: how anti-inflammatory action of calorie restriction underlies the retardation of ageing and age-related diseases (Chapter 3); epigenetic modification of gene expression by exercise (Chapter 5); the role of functional foods and their bioactive components in bone health (Chapter 8); and an account of the first decade of a study of calorie restriction in nonhuman primates, conducted by the National Institute on Ageing.

Nutrition for Healthy Hair: Guide to Understanding and Proper Practice
by Ralph M. TrüebThe quantity and quality of the hair are closely related to the nutritional state of an individual. And yet, there is hardly another field with so much prejudice, misconception, and debate as diet and health, let alone hair health. Pharmacy aisles and Internet drugstores are full of nutritional supplements promising full, thick, luscious hair for prices that range from suspiciously cheap to dishearteningly exorbitant. Since there lies an important commercial interest in the nutritional value of various nutritional supplements, a central question that arises is whether increasing the content of an already adequate diet with nutrients may further promote hair growth and quality. This book aims at distinguishing facts from fiction, and at providing a sound scientific basis for nutrition-based strategies for healthy hair, at the same time acknowledging the problems and limitations of our current understanding and practice.
