Evaluating Obesity Prevention Efforts

by Food and Nutrition Board Institute of Medicine Committee on Evaluating Progress of Obesity Prevention Effort

Obesity poses one of the greatest public health challenges of the 21st century, creating serious health, economic, and social consequences for individuals and society. Despite acceleration in efforts to characterize, comprehend, and act on this problem, including implementation of preventive interventions, further understanding is needed on the progress and effectiveness of these interventions. Evaluating Obesity Prevention Efforts develops a concise and actionable plan for measuring the nation's progress in obesity prevention efforts--specifically, the success of policy and environmental strategies recommended in the 2012 IOM report Accelerating Progress in Obesity Prevention: Solving the Weight of the Nation. This book offers a framework that will provide guidance for systematic and routine planning, implementation, and evaluation of the advancement of obesity prevention efforts. This framework is for specific use with the goals and strategies from the 2012 report and can be used to assess the progress made in every community and throughout the country, with the ultimate goal of reducing the obesity epidemic. It offers potentially valuable guidance in improving the quality and effect of the actions being implemented. The recommendations of Evaluating Obesity Prevention Efforts focus on efforts to increase the likelihood that actions taken to prevent obesity will be evaluated, that their progress in accelerating the prevention of obesity will be monitored, and that the most promising practices will be widely disseminated.

Evaluating Sustainable Food System Innovations: A Global Toolkit for Cities (Routledge Studies in Food, Society and the Environment)

by Élodie Valette Alison Blay-Palmer Beatrice Intoppa Amanda Di Battista Ophélie Roudelle Géraldine Chaboud

This book presents URBAL, an approach that applies impact pathway mapping to understand how food system innovations in cities, and their territories, change and impact food system sustainability. Around the world, people are finding innovative ways to make their food systems more sustainable. However, documenting and understanding how these innovations impact the sustainability of food system can be a challenge. The Urban Driven Innovations for Sustainable Food Systems (URBAL) methodology responds to these constraints by providing innovations with a simple, open-source, resource-efficient tool that is easily appropriated and adaptable to different contexts. URBAL is designed to respond to the demands of field stakeholders, whether public or private, to accompany and guide them in their actions and decision-making with regard to sustainability objectives. This book presents this qualitative and participatory impact assessment method of food innovations and applies it to several cases of food innovation around the world, including the impact of agricultural districts in Milan, chefs and gastronomy in Brasilia, e-commerce in Vietnam, eco-friendly farm systems in Berlin and The Nourish to Flourish governance process in Cape Town. The book demonstrates how food innovations can impact different dimensions of sustainability, positively and negatively, and identify the elements that facilitate or hinder these impacts. The volume reflects on how to strengthen the capacity of these stakeholders to disseminate their innovations on other scales to contribute to the transition towards more sustainable food systems. This book will be of great interest to students and scholars working on sustainable food systems, urban food, food innovation and impact assessment, as well as policymakers, practitioners and funders interested in these areas.

An Evaluation of the Food Safety Requirements of the Federal Purchase Ground Beef Program

by National Research Council of the National Academies

To ensure the safety of food distributed through the National School Lunch Program, food banks, and other federal food and nutrition programs, the United States Department of Agriculture has established food safety and quality requirements for the ground beef it purchases. This National Research Council book reviews the scientific basis of the Department's ground beef safety standards, evaluates how the standards compare to those used by large retail and commercial food service purchasers of ground beef, and looks at ways to establish periodic evaluations of the Federal Purchase Ground Beef Program. The book finds that although the safety requirements could be strengthened using scientific concepts, the prevention of future outbreaks of foodborne disease will depend on eliminating contamination during production and ensuring meat is properly cooked before it is served.

In chapters about boiling water, cooking eggs and beans, and summoning respectable meals from empty cupboards, Tamar weaves philosophy and instruction into approachable lessons on instinctive cooking. Tamar shows how to make the most of everything you buy, demonstrating what the world's great chefs know: that great meals rely on the bones and peels and ends of meals before them. She explains how to smarten up simple food and gives advice for fixing dishes gone awry. She recommends turning to neglected onions, celery, and potatoes for inexpensive meals that taste full of fresh vegetables, and cooking meat and fish resourcefully. By wresting cooking from doctrine and doldrums, Tamar encourages readers to begin from wherever they are, with whatever they have. To illustrate the body/soul correlation, Thomas presents engaging and diverse stories that include a young mom who got fit through volleyball and reaped spiritual rewards in her marriage, a 300-pound pastor who realized his obesity was eroding his ministry impact, and a woman who gained the spiritual strength to survive a contentious divorce by training for a marathon.
