In den meisten Fällen besteht eine Nicht-Zöliakie-Nicht-Weizenallergie-Weizensensitivität (NCWS). Gluten kann bei NCWS nur selten als verursachendes Agens nachgewiesen werden. Vielmehr kommen andere Inhaltsstoffe von Weizen, wie ATI oder FODMAP, oder eine gestörte intestinale Mikrobiota als Krankheitsauslöser in Frage.
